    Not something you see all the time. Wife found some on sale at Wal-mart for just over $4.00 a rack. Took a chance on two. Marinaded over night in Goya Chipote Mojo Crillio. Normally not a big fan of the Goya Mojo but wanted to try the Chipolte. Also did a modified Jeff's rub a few hours...

    Well until the fat kinda renders off, hard to tell what you have to work with for dinner. Looking pretty good. Finished product, tasty, but not so much meat.

    Sometimes it is hard to find "meaty" beef ribs, be they Backed or Short Ribs. We hit different grocery stores when we travel and are heading home. Sometimes we get lucky. If you like a tang to your beef, try some of the mojo crillio. I really like what it does to beef.
