Nothing special just thought I'd share. Made a batch of meat yesterday for some sticks. Used the lem hot stick seasoning mix with a good amount of homemade habanero powder added in for extra heat. Let the meat mixture sit the recommended 4 hours and then stuffed. Let them hang out in the beer...

No foil! Smoke the whole time! Just let the meat take as long as its going to take and the rewards will be great. Make sure you take plenty of pics to make our mouths water.

You are kidding yourself trying to figure out a time frame! It's gonna take how long it takes. Could take 15 hours could take 25 could be the 33 your coming up with. That piece of pork doesn't have a watch and doesn't care that your going to lose hours of sleeping smoking it to deliciousness...

I've done it both ways. I figure it's probably the same thing either way. I can understand the jerky cannon posing a problem if the meat is to tacky. Thanks for the reply Tropics!
I'm just wondering what everyone does. Do you like to mix your meat and let rest before stuffing and smoking or stuff then rest and smoke? What are the benefits to your preferred method do you think?
Aren't over nights fun?!? Ive done quite a few and they are rough but when you see those happy faces eating that delicious food it will all be worth it. I normally can get a good hour out of the splits I put in the beast so little 45 min naps thru the night. Can't wait to see the final product...
