Use a grate smaller than the drum and roll expanded steel around it. I used rebar wire to hold the charcoal basket together that I made for my mini. Pretty simple.
Not exactly sure what you mean by making them with peaches? Do you want to grill/smoke the peaches as well? Do you want to make some sort of peach chutney to go with the pork? Do you want to make a peach based sauce to baste the pork with?

It shouldn't matter what cooker you are using. What temp are you cooking at? I'm assuming by tops you mean the skin side? Not quite sure how a treager works. Is the heating element on top? Do you have any pictures of these ruined thighs? I know in my cookers I can cook thighs at 300 for an hour...
