    Bone-in Brisket

    Brisket is easy for me. Slice across the length for the flat and end-to-end for the point...but then, I almost never slice the point...it usually goes to burnt ends, or gets pulled. Burnt ends are THE best part of a packer brisket smoke. Eric

    If you want to jack it just a bit, add some fresh ground Ancho chili to your SPOG blend. It's a different flavor than red chili powder and is relatively mild. Beef chuck has a nice flavor, so it doesn't need much coaxing to bring out it's best. Eric

    I've never smoked a bone-in brisket, either. As for trimming the fat, I slice it back to about 1/4" or so of fat cap, and cut out the hard chunk of fat on the side of the point muscle (the corn).
