Now I see what you mean. Is that the 18 inch weber grate? I think you are going to need the smaller grates. I think mine are the 14 inch and the sit down low in the pan, only about an inch from the bottom of the pan, leaving 4 inches above the grate for charcoal.

The weber vents look like they belong there! Have you fired up the ECB to see how it works? Even without the gasket around the lid it should be more efficient alonging the smoke to escape above the food and not below it.
Morning TBD! It's 6:30am here in MA. But, I am drooling...looks good so far. Not sure what you will get when you pull them, but it should be interesting. I did a 5lb should yesterday in the pork forum, so you can check that out while you are waiting.
And here is the final pics. That was one good pork shoulder! Pulled it at 730pm and it pulled nice and easy, not mushy and plenty of juices. Glad I decided not to wrap while cooking as the bark was tremendous!

Absolutely. I haven't had and pp this season. Last I made was a small 3 lb butt that I did last winter. It came out really good but it needed a little note bark. I think I nailed it this time!

Well 10 hour mark and at it of 190. Still got a bit to go! I should be able to get it to 205 I. Another hour or so. I was hoping to take it off at 430 so I could eat at 630... might have to eat a snack or have a beer to hold me over
I'm looking at my ecb pan right now. I'm sitting here relaxing while I smoke a 5 lb shoulder.
My stock ecb pan looks to be about 5 inches deep or so.
When you load the pan you just won't be able to add as much charcoal with a 2 inch deep pan.
