I don't think this is strictly true, but we are on the fringes of my knowledge here. I think more accurately when the culture dies after lactose is exhausted, the bacteria break down releasing enzymes which break down the caseine into shorter chain amino acid.
Does sausage typically ferment to...
Can cheese cultures ferment meat?
I want to get into sausage making, but part of my hang up is I have more cheese cultures than I care to admit, most of which never get used. I don't want the emotional baggage of another bag of cultures sitting in my freezer.
First picture lighting made it look burnt, but then noticed the close up...
I'd eat that!
Did you do any direct heat cooking to cook the skin? Looks like you have it set up offset. I've never gotten good skin on my offset.
I realize this is an OLD thread, but felt better to keep the info in one place. I've been using Russian olive for over a year. We had a bunch of dead trees taken out, so I've got a few cords of the stuff. Unfortunately I've decided I don't like it. It burns SUPER fast, I've got to add wood like...
I did a search and didn't find any instructions. My kids want to try chicken feet and I don't want to ruin their enthusiasm but cooking then wrong. I probably have 20 feet to work with.
I'm pretty confident I can deep fry them and they will gobble them up. Going to brine some and fry them up...
Thanks for the ride on the carousel and the kind comments!
My wife has gotten real good at gluten free buns and we have been eating allot of sandwiches. Last night was pulled pork sandwiches. My 8 y.o. daughter walks by and with her newly developing sassiness says "hamburgers again?"
I almost...
Well I THOUGHT I was done with cheese sandwich posts...
But then turns out Friday was a Solemnity, so our family got to eat meat, so couldn't pass up the opportunity to at meat to our Friday cheese sandwiches!
This week I opened what was supposed to be a 4 month old Manchego, but the make went...
Trying to implement some humidity control in my cheese "cave". Planning to use an inkbird and small humidifier, but came across this neat article that covers using salts to achieve passive humidity control.
Turns out you can achieve different steady state R.H. with different salts...
Never made a smoker, but I have two (that have expanded metal, we don't need to talk about the total number...).
One has what I expect is normal expanded metal, one has expended metal that was flattened. I HIGHLY recommend getting the flattened version for your grates. The unflatened version is...
Yum. Going to have to make sandwiches not on a Friday for sure
You guys are going to make my next "sandwich" 7" tall! Lol.
They are smaller than they look. I ate 3. I also have 4 little sandwich eaters.
Nothing wrong with cheddar! If I had cheddar, I would have used that instead of the...
It's more involved, but no elbow grease required. You could use electrolysis like the cast iron restore folks do. It WORKS. comes out looking like it just came out of the casing mold. But you still have to get oil on it right away.

We have arrived at our grilled cheese final destination. Grilled haloumi, stacked with a slice of 3 month old manchego on gluten free sandwich bread.
Only way I could think to improve is to add sliced pickles.. Maybe next week...
That's all folks!
Thanks for looking.
