And you're right, being on call does put a cramp on your smoking time. I'm on this weekend, but I'm gonna roll the dice and do a small brisket and a rack of baby backs tomorrow! Hopefully I don't get called in, the wife might get a 5 minute crash course in smoking! LOL

Wow, that looks amazing! Every once in a while I'll find baby backs for 1.99 lb. Last time I bought 6 racks! Love me some baby backs! I usually just use Jeffs rub and love it. Did the coffee try to overpower the ribs? Sounds great but I haven't tried it. Great smoke and great post! Thanks, David.

Welcome to the forum Plugger! Glad your chicken turned out so good. Brisket can be a little tricky to get right. I would advise smoking a pork butt for some pulled pork first. That's a very forgiving hunk of meat. And it turns out so good! Happy smokin', David.
Do a boil test on the Maverick. If it's within a couple of degrees I would trust that over your Bradley therm. I don't know your smoker, but on my Masterbuilt temp swings of 40 degrees are common. Make sure the Maverick BBQ probe is next to the meat you're cooking. It does take some trial and...
