Second attempt at baby back ribs - date on camera is wrong

Nice looking ribs. I usually do my BB's about 5 hours at 240, and then do the bend test like DS said. But I like mine fall off the bone tender. Really nice smoke, thanks for posting. Happy smokin', David.

    Pulled, smoked Chuck Enchilada's

Wow, that looks amazing! I've done pulled pork enchiladas, but haven't tried with pulled beef chuck. The beans looked great too. And what a cool barn. I'd love to have a large space like that, but no room here in suburbia. Great post! Thanks, David.

    Wood pellets

OK, I'm confused. You posted in Roll Call that your instructions said not to use them, here you state that they say you can use them?

External Temp of an MES 30

Search "MES cart" in the search bar at top of the page. Lots of design ideas, don't know if anyone has enclosed theirs. You would have to be concerned about the exhaust vent and the chip loader as mentioned above. Good luck, David.

    Smoking pellets

Welcome to the forum. As for your pellet ?, there is a chance of violent flareups which could be dangerous. Get the AMNPS from amazenproducts.com and you can burn their pellets for up to 12 hours of continuous smoke. Most folks with electric smokers use them. Happy smokin', David.

    First house, smoking patio

Congrats on the new house! Looks like you're off to a good start with your smoking set-up. I built a small, but full, kitchen on my back deck a few years ago. A sink is really helpful, for hand washing if nothing else. I also really appreciate the counter space for food prep. And you'll want a...

2015 South Florida Gathering (5th Annual) November 13th-15th

I'm still here! Sorry about the long silence, been a rough summer. Diagnosed with throat cancer in May- surgery, 8 weeks of chemo and 40 days of radiation later, and I'm still kickin'! And we're still coming! We're bringing a bunch of oak firewood for campfires. Also doing grilled shrimp for an...
