Nice looking ribs. I usually do my BB's about 5 hours at 240, and then do the bend test like DS said. But I like mine fall off the bone tender. Really nice smoke, thanks for posting. Happy smokin', David.

Search "MES cart" in the search bar at top of the page. Lots of design ideas, don't know if anyone has enclosed theirs. You would have to be concerned about the exhaust vent and the chip loader as mentioned above. Good luck, David.
Welcome to the forum. As for your pellet ?, there is a chance of violent flareups which could be dangerous. Get the AMNPS from amazenproducts.com and you can burn their pellets for up to 12 hours of continuous smoke. Most folks with electric smokers use them.
