    Nice looking skirt steak. I like the idea of smoking one. I also like the low temp on the smoker. I do not see untrimmed skirt steak. I'll ask the butcher. I think the extra fat would be needed.

    I had the same issue, and I am one of the folks who plugged every other hole in the burner. It's perfectly safe. There is not much pressure at the burner. Worst case scenario it falls out and you have an extra flame. It still won't get you to 160-170 I don't think. In my case I did it because...

    Grinding spices

    I have a Krups also. The one I have has removable chambers. I have a tall one and two short ones. They have plastic lids that go on top during grinding. It keeps the dust inside the chamber. Less messy.

    Some nice Lamb Loin Chops!

    One of our favorite cuts of lamb. We buy up a bunch when they are on $5 Friday's at Safeway. Vacuum seal and freeze. Fast grill is the way to go, leaving a bit of red inside next to the bone. Yours look like they came out great! And that's a nice looking plate of food.
