Cooking Ribs on top and bottom grates in WSM??? Have to rotate?

For the 18" WSM you may have to cut your racks in half to fit them on the rib rack and still have them fit in the smoker. But I have seen a shot or two where folks kind of wove them in the rack to get them to fit:

    smoked sides

Double smoke potato's! They are awesome! Or smoke some raw eggs for about 1.5-2 hrs then use them to make deviled eggs, you get a nice light smokey flavor. They are a huge hit at parties.

How to dispose of grease from water pan

If I'm only doing a short smoke (less than 10 hrs.) I only fill my water pan about half full, for longer smokes I fill it all the way, but I don't add any water during the smoke. So at the end of the smoke a lot of the water has evaporated, then I just let the coals run until they burn out. So...

Cooking Ribs on top and bottom grates in WSM??? Have to rotate?

I run ribs on both racks no problem on my 22.5" WSM, for big parties I even have rib racks for both top and bottom and have had up to 12 racks going a one time. Only drawback is the ribs at the end of the rib racks can git a tad crisped on the ends because the heat is coming up the sides of the...

    Help with neighbours

Another thing is instead of doing a bunch of small smokes spread over the week do one big one once or twice a month. I have a 22.5" WSM and so I buy in bulk then smoke it all in one day and vacuum pack it and toss it in the freezer. I usually only fire up the smoker about once a month that way -...

    Weber Smokey Mountain smoker

You need airflow though the smoker for a couple of reasons: 1) to keep the fire going - you leave the top open and use the bottom three vents for temp control. 2) if you shut the top vent much below 50% during a smoke you run a good chance of the smoke creating creasote in the chamber and on...

Which Kingsford charcoal is KBB/Kingsford Blue Bag?

I use KBB (Blue Bag) for long, low, slow smokes and either lump or a lump/KBB mix for hot shorter smokes. KBB burns at a very even steady rate which in my WSM means I can get 22+ hrs. out of a 20 lb. bag.

Which smoker Humphrey or WSM 22.5"

Don't know a thing about the Humphrey but I LOVE my 22.5" WSM. I bought it back around 2009 and have never once regretted it, it just plain works - and you don't even have to do my old eyelet mod anymore since Weber added a big grommet for your therm probes now. You can load the heck out of it...

    Its here! WSM 22.5

Nice! You'll like the new toy! Just remember for lower temps damp it down at 200° and then crack one bottom vent open and creep it up to your target temp. The WSM runs hot for the first dozen smokes or so, and once the temps get away from you it is very hard to bring them back down.

Is the Cajun Bandit pimp kit or dress up kit for the WSM a good upgrade?

Been running mine almost stock since about 2009, only "upgrade" I made was to come up with my mod for eyelets for the therm probes. The new ones have the nice fancy rubber grommit already installed so you don't need to do that. Only thing I am tempted to spend $$ on is to get a blower, but I...

    Baby Back WSM TIps

With the 18.5 you may need to cut the ribs in half to get them to fit (I have the 22.5" so I can't say for sure regarding the 18.5"). I usually cook in the 250'ish range unfoiled for about 5 hours, then I sauce them and sear them on my Weber Kettle just long enough to caramelize the sauce. As...

WSM 22.5 - a must to get modifications such as Cajun Bandit?

Actually you don't need a cobalt bit, but there are a few things to do to ensure a clean drill: Must have a brand NEW bit - or one that has been just sharpened. That makes a huge difference.Make and "X" with two pieces of blue painters tape (or masking tape), then center punch through the tape...

    New smoker

Keep in mind how much capacity you will actually use 95% of the time vs. those one or two times you might need a bit more room. I have put 90 lbs of meat on my 22.5" WSM at one time - (4) pork butts on lower rack and 3 full packer briskets on the top rack, it was a tight fit though. That was for...

    New smoker

If want charcoal and vertical it's WSM all the way. I have had a 22.5" WSM since about 2009, only mod I made was to add eyelet holes (new ones have that included now), and it has never let me down. I fire it up and the neighbors come running because they know there will probably be some goodies...

    Finally gonna smoke some wings!!!

That should work great, I did a bunch of smoked wings on my WSM for Super Bowl and just finished them in a 400° oven for 10 minutes before saucing them. That worked real well.

    Adding charcoal?

Thanks Al, glad to see you still kicking around and firing up your smokers.

    First Brisket

Another option if you want to trim the fat is a method I picked up years ago from Smokin Al. Trim all the fat off, rub the brisket, and the fat, then put the fat on the rack above the brisket. After about 6 or 7 hours the fat can be tossed (or give a piece to a dog for a super treat), after that...

    Adding charcoal?

If you have to add charcoal mid smoke there are a couple of different methods/scenarios: If you are using lump then you can add it straight on without to much worry. If you are using briquets and want to avoid the white billowy "start up" smoke you can put it in a chimney and get it about half...

    Broken leg....

Chloe will be three at the end of April, and she currently weighs 116 lbs. She's on the small side for a St. Bernard, so we jokingly call her a "Teacup St. Bernard"... lol I don't know if you have tried a cone of shame yet, but it might help with the chewing on the splint - or at the very least...
