The AMNPS 5x8 can be a bugger to keep smoking in the New MES Bluetooth, but with a few tricks, it will work great
The chip loader must be pulled out 2" and rotated to the "Dump" position for any airflow thru the smoker...Airflow is the key!

I own a RecTec, GMG Jim Bowie and Traeger Texas
All 3 cook well
RecTec has all stainless parts inside, and ITC controller and temp is spot on
Swapped out the Traeger controller for an Ortech and it performs very well
GMG has accurate temps and a little taller inside
I really dig the Yoder...

Some pellet grills/smokers like the Yoder are 100% Made In Usa

The AMNPS was designed out of frustration with my own MES because it would not deliver consistent smoke.
I think I paid my dues when I invented the AMPS 5x8. I have THOUSANDS of HOURS logged in testing the AMNPS in various smokers, as well as had over 20 people involved in testing it before it...
Remember....$.99 Cheese tastes bad before it's smoked and even worse after!
Buy good quality cheese
Start with a little smoke for a short period
If you want more smoke flavor, you can always cold smoke it again
Too much smoke, and you may have to let it mellow for weeks

Air, Air and More Air!
Intake air and a large exhaust are your friends when cold smoking
A small 1/2" intake and exhaust hole just do not allow for enough combustion air and exhaust
I smoke 20 lbs. of cubed cheese 3-4 times per month for demos, and don't use extension hoses or a mailbox mod...
I like the concept, but wonder if there's enough air for combustion of the pellets???
The flame may use up any oxygen needed for the pellets
Adding too much air could throw off temps too
It's really gonna be a "Trial and Error" thing to get this right

The issue is air flow inside the New Gen 2 and Gen 2.5 Smokers
Masterbuilt has made it virtually impossible to get any intake air in or out of the smoker, but there's a couple tricks to get the most out of your MES
Let's take a step back
