amazin pellet smoker vs tube smoker

Ray - I also have a Tube, 12", and a lot of left over chips from when I tried to get the MES tray to function. How do you use chips in the Tube? How firmly do you pack them in? How long does a full tube burn for you in a hot MES?

    Getting through danger zone

I would think that single malt scotch would sanitize and add to the flavor profile in a unique way. May be time for a test run. If no one gets sick for three cooks that would be proof it works and then it would surely be a warranted expenditure for health and safety purposes. If at least three...

Corn and onion on my new-to-me MES 40

DirtSailor - Thanks for the response. When I was reading how others did onions I wondered about the blooming idea but had not thought about butter/seasoning then closing it with the bacon wrap to smoke. I bet that will work and hope to post a qview soon of the smoky bloomer. May try one with a...

Corn and onion on my new-to-me MES 40

Saturday I bought an MES 40 Gen. 2.5 for $150 that works great. Took a lot of scrubbing to get it too look like it should but it cleaned up nicely. We planned a full day Sunday smoking chicken leg quarters, BB, CSR and wanted to do corn and whole onions. Decided not to load the MES up too much...

    SMF Cookbook

Ok, enough. This is sounding like my typical day at work--like today. I am glad you guys are getting all that straight so I am going to smoke something--in my pipe and my smoker.  When it is all figured out I volunteer to help with the formatting, etc. Let me know.

    SMF Cookbook

Having assemble such collections and posted with links I see the "bold" aspect being willing to spend the many hours it will take to build that "web site". It will be a great service to everyone. The only downside is I have enjoyed coming across the recipes and saving them as links or a...

Late start ,picnic shoulder on the kettle. Qview

I also like the kettles and recently added the Slow-n-Sear to my 22.5" Weber. It works great at holding the temp steady. Read about the coals around the perimeter like you are doing and need to try it. Looking forward to how the cook turns out for you.

    Tough Brisket ................ Help!!

Chef JJ - Thank you for this straight forward explanation. My understanding jumped way out beyond where I was. Now, the challenge is applying that understanding. I will always remember your analogy of hitting that evasive "window of perfection"-- with the right balance of time, temperature and...

Jeff's Archive of Recipes Has Returned to the Sight

Fantastic!!!  I will order the rub to pay-back even though that is very little for such a great collection of recipes. Although, they will not help my weight challenges.

First time using CI. Questions and advice please.

And so begins the forever and ever debate about what to use and not use to season cast iron. I avoided that debate at the Cast Iron Forums and will only respond by asking that you consider Sheryl Canter's research and recommendations at her web site in the article titled  A science based...

First time using CI. Questions and advice please.

First you need to accept that you may be about to acquire another addiction; i.e. in addition to Q smoking. With that warning I offer the following advice based on my having bought over 50 pieces of CI some of which are 80+ years old. My adult children now how sets of skillets to the point they...

    Tube vs tray

Just got a 12" tube and used it to cold smoke cured bacon. It produced way too much smoke in my Weber Kettle; i.e. a small chamber. It also raised the temp 15-20 degrees on a 65 degree day. I am sure it will be great in a large chamber.

Help please! $65 in meat ruined?

I have read this three times. I will re-read it later. It is one of the most insightful pieces on the site. Thank you for your time to write it and all the many hours you have spent on this site for us.

    Hand Crank Meat Grinders

This question may be a little off-topic but how did you clean the tinned grinders--assuming you made them so shiny? The ones I see are very tarnished and rough.
