    Simplified (not traditional) Beef Bourguignon

I pull this together when I'm wanting something comforting but not really involved. Usually make it when I know the wife is going to be out with her friends for dinner. It's not traditional, very few ingredients and a bit thyme forward, but never the less I like it. Served with a good red wine...

    1/2 a beef questions

Chuck Plate Ribs - 4 bones to smoke up some great Dino Bones. You also want the picanha also known as the sirloin cap or culotte. That one take a good knowledgable butcher. Another cut many bypass is what most call a Denver steak.

No time for brisket so it's Dino Bones!

It will be really interesting to how these come out Rich. 4-bone and sometimes 3-bone chuck plate ribs are usually cryopacked. Head to your grocer and see if they can't order them in. Fresh Thyme Market might be a place to try.

Thanks J ! Go get yourself some plate ribs, I know you'll like 'em. Appreciate you checking in David. When you want brisket but don't want to spend the time and/or money, then brisket-on-a-stick is the solution.
