This past week I had 200g of flour on my scale, turned around and bumped the scale and it went to the floor with the flour. Ok clean it up but my scale dont work.
I got a new scale now.
No farmers mkt tomorrow due to severe weather.
So the fresh breads will need to go to the freezer.
Fresh milled hard red/white mix.
Jalapeno/cheese using Winona flour (13.4% protein) and FMF hard white.

stay same on starter and salt, do 6 rounds of coil folds
