Dave i feel your pain, I had three in one week. A total knee replacement and two for compartment syndrome. Positive attitude and thinking about your next cook will make it easier. Good luck, let us know how you do.

I have built a dedicated wok burner using a salvaged turkey cooker, cast iron wok plate from a Sunshine grill and stainless sheet metal from a college dining hall transport cart. I cook outside on my wok about once a week. One of the keys to cooking in a wok is very high heat and the turkey...
I have used Polder, Maverick and many others but have settled on Thermoworks. I just got a four probe Thermopro unit and find it really handy for having one in whatever is cooking on three levels and one for chamber temp on my Dump find MES 40 using a DIY PID control.
If you perchance have a...
I live in a town with a large population of "Snowbirds" , southern living in the winter and here in the summer, they throw away so many grills. We have a dump the allows picking and recycling is encouraged. In 45 years here I have never bought a grill and have found ten Webers some like new. I...
I get them at my local Hannafords ( ME, NH, VT, MA and NY) chain grocery store. Today they are $9.79 lb. Like negolien said you have to ask for them. I usually ask them to bring out a few packs so I can choose which ones look the best. They also have TriTip steak.
The plastic meat grinder attachment is junk. They used to be made of metal. Took me awhile but I finally found a NOS one on eBay. Nice find. They are great mixers.
Another issue I forgot to mention is that 20# gas tank cannot safely supply the burners at that Btu load. The gas in the tank is in liquid form and will stay liquid until pressure is released through the piping and regulator. As the pressure drops the liquid will boil (It boils at -44 degrees)...
The diffuser plate will help. Judging from the photo most likely that pool heater was rated at 500,000 Btus so each burner is 100,000 Btus, about the size of the average household furnace. Way too much heat. Turning down the pressure of the gas can be problematic and cause combustion issues...
Nice build on the PID control box.
I built mine using a PID and SSR kit I found on eBay for $25.00 and set it up with 120vac inlet and outlet receptacles. The box is a Cantex one you can find at big box store or electrical supply house or Amazon.
Here's one for$16.00 ...
Found this MES 40 in my local metal dump, as expected the control was dead. I had made a PID based control module for my 500 gallon counter flow smoker but had never used it. After cleaning off ten years worth of woodworking dust I mounted it on the MES 40. The MES wiring was easy to strip out...
Hi Warren,
Sorry for your loss.
I have built a 500 counterflow, a 250 offset and a 60 counterflow. I too am getting older and will be selling the 500 but I love the size of the 60. I will follow along as you progress.
I worked in the Propane industry and tanks were free (the best kind).
I have...
Mike,
The Serious Eats version has the addition of a top plate. I didn't make one but will be as the stone gets so hot it cooks faster than the top of the pizza. "Dooming" the pizza helps but the top plate should hold the top heat down.
