Here are some wings taken to about 200°.......and yes those little bones are the wing tips! Lol!
I helped a friend of mine build one for himself last year.. That's the one He used for his.He has no complaints... And it holds a temp well just like most drums will.. I welded an exhaust tip on mine that is 2.5 in and about 8" tall.. No difference in how mine performs compared to his.
I'm curious too. Also about how much canned whole tomatoes to use. I think I'm going to try and do this this coming week. It just looks too good not to!

I treat the flat iron just the same as a skirt steak or a flank... Hot and fast and dont over do it by any means. Slice thin accross the grain... I use this cut often for steak tacos... Just like the flank it takes well to a marinade.
I'm on my second webber and I had one from Wal-Mart inbetween the 2 that lasted about a month... I'd definitely stick with the webber...this also makes me think there would be opportunity for someone to manufacture a better one. Not that the webber is bad but there could definitely be some...

Looks good from here!!.. Nice first run on the new kettle!!.. I have to agree with @chopsaw on both taking them up close to 200° and the rendered skin.. .. Crispy skin is good and all but I really like tender bite through skin on thighs and drums off the grill.. And the higher finish temps...

Ive seen it at Kroger here too... I may have to grab some....i noticed to the same brand (I think) in wagyu beef...Ryder and I tried the ground..it was really good!!..
