    Thanks for the kind words. The pit temp was in the 260° to 275° range and if you look close at the 2nd photo you can see how the loaf had shrunk a bit while cooking, and you can also see the liquid that collected in the pan. The weighted pan was after we poured off most of the liquid.

    Woah, those look great. Rice wine vinegar is a subtle wake up call when used in the wrap or in a sauce. I also like a small amount of Blues Hog Tennessee Red for the vinegar back flavor with a touch of sweetness.

    There is a lot of fun to be had at charity events 👍. One year I cooked at one that raised money for a group that organized dog rescue/adoption. It was more of a peoples choice type of judging, and each team brought a minimum of 3 different items to serve to the public through the day.

    I often do a second smoke on them, just to wake up the flavor before adding to a pot of beans. Sometimes I'll do a pressure finish on them and shred the meat, then vacuum seal in smaller portions for use in a variety of soups, potato soup in particular is really good.

    I have a round one too, but the oval ones are probably more popular. The design was well thought out... a heavy bottom with sides that are thick at the bottom, and tapering up to the rim.
