I have drank so many beers while smoking meat. I would end up feeling like shit at the end of the day, just exhausted. My wife's uncle turned me on to Michelob Ultra and that doesn't really get me drunk at all so at the end of the day, I feel fine. So Michelob Ultra is my new bbq beer.
I use the 2-2-1 method. Smoke at 225. 2 hours in no pan, 2 hours in foil pan covered, and 1 hour uncovered in foil pan. At the last hour, I baste with bbq sauce.
It's usually just me and my wife but sometimes my parents or her family. I occasionally throw barbecues to get some friends over and eat my smoked meats.
