Still good info. I live in Northern California and didn't know where to get a good offset smoker. I just happened to get an old one from my wife's uncle.
I got some steel wool and some high heat paint and I have been scrubbing it today. I don't even know if I will be able to get it all off but it is starting to look better.
Awesome! I was going to post asking about this but didn't have to. I found rust on the bottom of my offset smoker and I will be cleaning that off today.
I would say baste it with mustard, then put a good dry rub on it. Let it sit overnight. Smoke with a good hardwood around an hour a pound. Smoke fat side up. The fat will drip over the rest. Low and slow!
I thoght it was good. I was nervous at first but I grew to really like it. I think I could have had more jalapenos in it though. It was jalapeno cheddar pork summer sausage.
Oh Lord! The jelly on the cornbread had me cringing. You need to teach them. I'm from california but I have lived in the south and it is way better down there.
I have a Charbroil propane grill and I like it. Their customer service was good when the firebox rusted out on my dad's old grill. We got a new firebox and replaced it. No problems.
