I have not had much luck running all cherry. I dont look for it anymore since have to mix with oak or hickory which masks the little bit of flavor it can provide. My fav three are apple, oak, and hickory. Cant stand mesquite.

Sounds and looks like a great meal. Never marinated with italian before or used a vacuum container to help. Will give it a try next time. They look very tasty.
Could ask around to borrow one. They rent them too. Is it a brick fireplace surround or rock/stone? I wouldnt drill into brick as previously said, mortar joints ok.
