I saw your post. That's what made me say "Honey, you need to make a Strawberry pie". There are lots of fresh strawberries around here right now. Thanks for your inspiration.

    Strawberry Pie

Lots of fresh strawberries around here right now. My wife likes to bake. She makes her own crust. Cuts up her strawberries and uses raspberry filling. She claims that is the secret. I agree. She makes good pies. Here's a pic. Those are strawberry pretzels on top.

    Piggy Kabobs

Been marinating all day. Pineapple is from our garden. Marinade is Mirin, Apricot preserves, Lite Soy, Pineapple, Honey Habanero and Crystal. Lots of veggies. Apricot is a perfect foil for pineapple.

OK I Admit It - I'm a Coffee Snob. Who Else??

When you go to Costco pick up the bag and sniff the one way valve. You'll know instantly if it carmelized or stale. When you get it home freeze the bag, grind it frozen and put the bag in the freezer immediately. Don't let it thaw. Freezing slows down the oxidation and the bag will keep.

Mine are still wrapped for a little bit. I added a touch of bourbon to the trough water just for fun. Figure they'll be finished about 6

    Rainy day ribs!

Nice looking prep. I'm doing babybacks today too. Mine are sprayed with Mirin, a drop of honey rubbed on each half rack and some modified Hunky GPR rubbed on. I'll paint some Braswells Honey Habanero on the finish. I use the 2-1.5-45 method on baby backs and when they are foiled I fold it so...

OK I Admit It - I'm a Coffee Snob. Who Else??

I looked up their website and it looks like Sweet Marias is showing up the grower origination. When I was in the coffee business there were only a few of us in the whole US. Starbucks was just starting out and it was a 1 store retail business. Later they bought out the company that bought mine.

You have to know what you are buying in green beans. Even the very mountainside can make a difference. There are a few different species of beans and various strains in different growing areas of the same strain. There are male & female beans. And one particular crop like Blue Mountain or Royal...

OK I Admit It - I'm a Coffee Snob. Who Else??

Coffee like wine depends on the year. The trick with coffee is to keep it moving while it's roasting and moving while it's cooling. Chemical changes in coffee that's roasting and cooling are very complex and the change needs to be as even as possible. A coffee tasters job is to make sure the...

Egg coffee is always good. When I make it I do it Cowboy style and throw a little cold water in to settle the grounds. I only use the egg white in my version. I still have my blend book.
