    A Couple Things I Love Bout This Area…

    Had my Granddaughter to the Arcadia rodeo. Best part was when they called down all the kids into arena and lined them up one side maybe 200+ kids. Then they turned 3 calves loose with red bandanas on their tails. Winner gets a prize. She didn't win but it made her day.

    Here's a cheat for it. Mix up your meat and spices (this one is beef & lamb). Take 2 different size aluminum pans flatten out your mix in the smaller one and put some water in the bigger one. Float the smaller one on top. BBQ it. You can't shave it but it makes a good copy.

    Asparagus

    We put them in a ziplock along with a little olive oil & coarse ground pepper and roll them around. Take them out, throw them on the grill and char them until they're blackened. We eat them like french fries. Out of curiosity do deer raid your asparagus fields?

    Breaded Pork Tenderloin 3 way

    Pork tenderloin sliced, pounded, bathed, stripped and rolled. I used 3 different pankos. Done with Cherry smoke. Bath is Dukes, eggs, soy. Traditional panko with dried onion, garlic powder & pepper added. 2 batch is done half pretzel panko, 3rd batch is a combination. Last batch is in now.

    Great looking BLT. This may help you out. Here's trick.You can ripen tomatoes on the stalk by hanging them upside down in the dark in a cool place. We had a root cellar out West and we had ripe tomatoes all Winter long.

    Chopped boneless skinless chicken breasts touched with honey and a mix of GPR & Hot Whang. On the Kamado at 500f. Flipped with olive oil & peppered green beans on top. Served with a hard roll. Good stuff. ___

    Anyone have a blaze?

    My Kamado Joes would go over 900. I had a temp fan & control on the coal door. The Blaze I've gotten a little less than 800. I rarely take it up that high. For my usage the Blaze is fine. Whatever you choose I'm sure it will do the job.

    I haven't used a kickass basket with it. Looks like a good idea. I have a couple stack grates I saved off an older Kamado.
