    it would have to be running really hot to get it to 190 in four hours. Run a probe to check the mes temp.

    not sure if serious or not. May not be done enough at 190. You don’t cook brisket to medium, it would be grossly inedible and tough.

    Locations circled look like the connective tissue didn’t render out. Next time, take it to a higher IT. I find around 205 to be a good spot. Reheat until the white in the circles disappear.

    Some of the slices look like they are under cooked a bit in some spots. May be why you say it’s dry. Reheat like you said and they should be better.

    Flats only can be tough to master. A well known member has a recipe that involves panning and adding juice for additional moisture. Tough generally means undercooked, as others have mentioned. don’t be afraid to try a whole packer.

    The WSM is a good smoker, that is relatively easy to figure out and run. I’d say keep it on the short list. One thing to keep in mind is fuel availability. If you have an endless supply of wood, the offset might be for you. If you don’t, you’ll have to purchase it, which can get pricey...
