    My first disaster!

    The shoulder was about 9lbs.  I was using a MES smoker and had the built in therm in it.   Usually that therm works good.  I had it at 225 for about 10hours and it was only at 165 when the party started so I bumped it up to 240 so maybe it would get done faster.  But that wan't the case.  I have...

    My 2nd Pork Butt

    This pork butt took 25 hours to get to 197. And it wouldn't get any higher. I was up every hour last night thinking it would hit 200 soon. It never did....and sat at 197 for a couple hours.     My 2nd Pork Butt

    Ok, well I was up all night with this butt.  I woke up every hour to check the temp.  It never got above 197.  It sat there for a couple hours.  Finally, I took it out after 25 hours!  It turned out awesome!!
