I have the Pro 34 Series Treager. On my long smokes for some reason I lose temperature. I have to open everything out and clean out the heating pot. It gets filled up with pellets and smothers the flame. Is there a way to adjust the auger?
I have had the same issue a couple of times. What I started to do is start it at smoke mode and within a couple of minutes I move it to 180. After that I move it up a notch until I get it to the temp I want. I think at times the pot might get filled to fast and puts out the flame

As many of the others have said, don't use mesquite it's too heavy. My first choice is Alder then apple wood. The banana leaves are fine, however smoking tends to dry this type of fish out so keep an eye on it.

One item to add is I smoke my chickens upside down. As the juices run out the last thing they touch is the breast meat. I was told this by a chef that cooks his turkeys for thanksgiving that way. Just a thought
