Yeah Cranky, I have now added some tuner plates and have tried one burn but didnt get real good results yet. The temp was at 250 at the top center thermometer and 208 at the grate level left side and 267 at the fire box side grate level! I am going to move them a bit closer together at the fire...
I agree with Ribwizzard on this! I was thinking more about the smoker box. I misread the thread title! I am trying to regulate heat better( another issue). Sorry about that!

Gary, Thank you for the welcome! I do agree, there is a ton of information on this site! I have been all over it and have enjoyed reading and learning about and from everyone. I have two butts and some ribs going on the smoker Saturday and I have done my homework ( obtained from this site!)...
Ill be smoking a couple butts and some ribs this Saturday. I will try the firebox setup and see how that goes. I wont have time to get the gasket by then but then there will be more smokes soon after Saturday! Thanks again!
Does anyone make a kit to seal the Pecos offset smoker? Or what have any of you used to seal yours? I read that some have just smoked on them and over time they have gotten better. I dont see how thats possible if the same gaps are there. I am getting alot of smoke leakage and I assume heat loss...
Yeah, I've smoked a few butts and they turned out good. I was thinking of maybe a tougher cut of meat that is cheap and would tender up after a while on the smoker. I guess I was thinking about the challenge. Not that I really need a huge challenge yet!!
I was wondering if there is a meat that is inexpensive some of you may have smoked that will tender up and turn out pretty good? I thought this would be a fun project for a weekend when not much is going on!
