Success! I was told the ribs were better than bootleg bbq(a local restaurant) the pulled pork everybody seems to enjoy it. And I learned alot in the process! Ready for the next one!
Update: ribs and butts are on. Temp of smoker has been about 20° difference across smoker :-). About 2 hours in and going good! Temp of butts 102 and 95. About to wrap ribs!
My wife had informed me I was cooking for a large party. Turns out it's a small party off about 15 to 20 people. I've thawed prepped and rubbed down 2--8lb butts and 4 racks of ribs! Love you honey!! The neighbors, hers and my mom and dad will be fed well and plenty left in the fridge! :-)
