    GMG vs Traeger

looks good Aaron...as you use your GMG DB more and more...you'll continue to be impressed!  From your photos looks like your stainless steel chimney cap is set a bit too high....screw it down until you can just get two fingers between chimney and cap..that will be perfect. Otherwise, I've found...

To brine or not to brine a brisket?

No brine for a beef brisket. You really want the BEEF flavor to come out....I inject my brisket with a mix of beef broth and melted butter....keeps it internally super moist, and you get that full beef flavor. Dan

Smoke flavor on a pellet grill?

I have a GMG Daniel Boone Pellet grill and LOVE IT!  Will never go back to anything else!  As for pellets, I use the GMG Premium Gold Blend. Hard to find a better pellet. It's a mix of 70% oak 20% hickory and 10% maple.  And they do a great job, giving a nice smoke ring to just about anything. ...

My first pork butt....tips and tricks please!

I"ve been smoking for quite a LONG time, and have tried both fat cap on, and off, and cross cut, etc etc.  I have found it really doesn't make much of a difference other than the butt finishes a tad sooner with that fat cap removed. Also, I use to smoke LOW as welll.  225 was "the law" but have...

    my pork butt confession

Hey Bear! Good to see you!! :) Yeah..this was a "I JUST DON'T CARE" Pork Butt!  Kind of sad to say that, but I wasn't smoking for friends, or a party, or a holiday get together. Just felt like smoking up a butt for Sunday dinner. So like i said...Trimmed the fat, injected it, rubbed it and...

    my pork butt confession

Hey guys...well I've been "smoking" meats for a long time, and have always followed the old rule of LOW AND SLOW, and never looked back. 225F was my BIBLE and I never smoked much hotter than that. Well, this weekend, I wanted to do  a large 12 pound Pork butt on my GMG Daniel Boone (pellet...

Weber Smokey Mountain Charcoal smokers for business?

I would agree.if you are gonna start a serious bbq business....forget the WSM's and build your self 4-6 UDS's....they smoke every bit as well as a WSM and cost next to nothing to create. You can put "pit contollers" on them as well. HTH Dan

    Fed up with amns

You also NEED to be sure you keep your "dust" sealed up nice and tight...AND if it sets for any length of time it WILL get some moisture in it...the best thing to do is to spread out a few cups of the dust on a cake pan, jelly roll pan, etc and put it in your oven at 200F for about 10-15...
