    Merry Christmas

Being new here to SMF I would just like to say Merry Christmas and a Very Happy New Year to all of you smokers out there.  I have really enjoyed reading and learning from all of you and plan to continue to better myself as a meat smoker and sausage maker.  Once again Merry Christmas and a Happy...

    Any Louisiana Smokers out there?

Shoneyboy, let me know how you like the recipe.  Like I said I liked the taste of it as much or more than any I ever bought.

    Mobile device version of SMF

I'm having trouble trying to get the SMF mobile to work.  I have a Casio G-zone commander.  When I hit the mobile button it asks me to login, I tried using my login information for this site and it says it's not recognized.  I thought maybe I might have to register for it but when I try I am...

    Caring for casings

This is probably going off in a different direction but it sounds like you guys know sausage so maybe ya'll can help me out.  I made and cased some Boudain not too long ago and had a little problem with the casings.  After I filled about 5 to 6 inches I would twist them off but, when I went to...

    Any Louisiana Smokers out there?

Thanks, I guess I will be making another batch before long and will have to try it on the smoker.  I just have to get a sausage stuffer first.  Last time I ran it through the grinder twice and it wasn't the proper texture but the flavor was about the best I've ever eaten.

    Any Louisiana Smokers out there?

I was just wondering if anyone has ever tried smoking Boudain.  In case you don't know what that is, it's a Cajun sausage made with Pork, liver, herbs and rice.  Would love to find out if anyone has and their process, if not I may just have to try it myself and post my results.  You can buy it...

    Newbie

Hey there, My name is Jay and I live in the mountains of western NC.  I have been grilling for, I couldn't even guess how long.  I grill using nothing but charcoal.  I do have a dual fuel grill but the ONLY time I ever used gas with it was to get the coal started.  I now use a coal chimney to...

    Newbie

I'm fairly new to smoking using an actual smoker, I've done quite a bit in my charcoal grill using indirect heating.  I smoked my first turkey breast for Thanksgiving but since my smoker wouldn't get to a decent smoking temp (Brinkman square vertical smoker), I abadoned the smoker and once again...
