Bought used smoker. Should I clean it?

Thanks Guys. Cleanining it seems to be the concesnsus. Would you use any chemicals of any sort on the inside or outside (e.g. simple green) or stay away from them altogether? I have heard that you can clean the outside real good, build a fire and coat the outside in a cooking oil instead of...

Confused - Charcoal or Wood in my smoker?

I have plenty of wood, although I may use more than I think I am going to. My initial interest in the burn barrel was to be able to put pre-burning wood into the smoker so that the temp wouldnt fluctuate that much. Plus, I hear that the smoke from preburned wood is ideal. If this doesnt make...

Confused - Charcoal or Wood in my smoker?

I have been reading about how to fire my smoker (photos below) and am still not sure if I should be using charcoal and throw a few sticks on top for smoking, or if I should be using the smoking wood as the fire as well. I am building a fire barrel in order to pre burn wood for the smoker so am...

Wood Smoker - Water Pan or Not?

I have a traditional heavy steel horizontal smoker with side fire box. Am I supposed to use a water pan with this type of smoker? My guess is no. Also, I have what appears to be a drain pipe built into the bottom of the smoker. Is this to let grease run out? Photos below.

    Which Gloves?

I have heard when smoking bigger cuts of meat that you dont want to pierce them with a fork and some are too heavy to lift with tongs. So I was thinking a good pair of gloves would work well. Does anyone do this? What gloves do you recommend? I have heard firefighter gloves may be good. New of...

    Log Splitter?

I have come into a bunch of Pecan wood from a friends ranch. They are whole trees that I plan to cut-up with a chain saw. They have been on the ground since August. Knocked down by tornadoes. My question is, what do y'all recommend for splitting this wood without spending hundreds of $$? I...

    Famous people you have meet.....

Cant say I am proud to have met everyone of these folks, but I guess some consider them famous. Living in LA and traveling for a living for 12 years, you meet a lot of folks. By meet, I take that to mean shake hands and talk at the very least. Here goes in no particular order. As I think of more...

Help me design a frame for my smoker

Well, the guy at the welding shop recommended it and said it looked like the post was at the balance point. I am assuming he knows what he is doing. But if not, I know he will make it right. This is Texas after all.

    Where to mount smoker probe

OK, so probably a really stupid question, but where would I mount the probe to? Shouldn't mount it to the grate correct? Otherwise I am not sure where to mount it. The walls of the pit are smooth.

    Where to mount smoker probe

I just bought a Maverick temp. gauge with two probes (ET-73). Where and how do you mount the smoker probe? I have a traditional horizontal wood burning pit with side mounted firebox.

Help me design a frame for my smoker

Well, I have decided to go the simple route. Cut the vertical post and have a farm implement disk welded onto the bottom. This way it will be stable, somewhat mobil and I will be able to rotate it depending on the wind. Thanks for all the suggestions.

    How to mount thermometers

Thanks Beard. Do you have several holes in your pit and just move the thermometer around, or do you have several thermometers setup? How many can I get away with? Thinking one probe near the cooking surface and one in the meat? How do you mount the probe near the cooking surface?

    New Guy from Central Texas!

Hello again from Texas! Thanks for all the warm welcomes! Hopefully I will have some QView to share soon. I am having a base welded to my cooker today and am in the process of building a fire barrel to make pre-burned wood for the smoker, when I go for those all night smokes. My wife thinks I...

Help me design a frame for my smoker

Thanks for the replies so far. Please be aware that it weighs at least 200-300 pounds if not more so lifting it onto a trailer hitch would be a 3 man job - me and two real men. My 3/4 ton truck would hall it no problem.
