    Extra smoke flavor for pellet smoker

    I always use a smoke tube in my RT-700. The air flows from left to right...so I place it on the grates on the far left end and the smoke flows nicely over the meat on it way out the chimney. Works great and adds great flavor.

    I just did my first bacon very recently. I’d say you are doing just fine. I had so many concerns throughout the whole process! I also had little to no liquid in the bags while curing. But I followed almost the exact process you are and it turned out great!

    Ya this belly was not real thick...especially after I removed the rind. I’d say it’s barely 2” at the thickest part.

    Ya, I realized that after I had already done it. Next time I will portion them, weigh them, and calculate cure for each portiion.

    The jerk ribs were surprisingly amazing! I’m always a little leery of these pre-packaged items. But at $6/rack, I couldn’t pass them up. Now I wish I would’ve bought them all.

    I love them. I’ve been using them for about a year. They really help contain messes...especially when just grilling meat. I don’t use when smoking very often. But when grilling, you still get great grill marks like there was never a mat!

    Just picked a dozen jalapeños out of the garden, stuffed them with cheese and bacon and threw them on after the ribs came off. Picked up a great little pepper holder at Cabela’s yesterday...figured may as well try out all the new toys!

    Just pulled the first beef rib off and immediately ate it...amazing! Wrapping the rest and letting them redistribute juices a little. Getting close on the turkey. About to wrap the brisket point...little more to go on the flat.
