    Throwdowns and such

I haven't decided if the ability to see the results before voting is a good thing or not. I'm not for changing once you pick, though. One way to look at it is that if you see that the dish you would pick is way ahead, you could toss a bone to an entry with little or no votes and the one you...

    Throwdowns and such

It's been awhile but I don't believe you could change a vote, once cast, on the TD polls I posted. It's up to the one posting the poll to set the parameters, such as seeing the results before you vote, the ability to change your vote, etc. That said, I make my choice when I vote and that's that!

    Smoking sausage on pellet grill.

Good advice. Cracking the lid on a pellet grill will result in the controller trying to maintain the set temp by feeding more fuel into the firepot.

    Smoking sausage on pellet grill.

My pellet grill will go down as low as 160°. That said, I usually run just a pellet tube inside when smoking sausage. I just smoke for color and poach in sous vide to finish. If just the tube isn't getting me the color I want, I will fire up the pellet grill at 160° and run until I like the...

    Pork Shoulder Blade Steak ??

    Bucket Potatoes

I tried repurposed empty cattle protein tubs a few years ago. I drilled drain holes in the bottoms to allow them to drain excess water. I didn't cheap out on the soil, either, I filled them with bagged garden soil. Started by covering the seed taters with a few inches of soil and added more...

    Pork Jowl Bacon

A lot of folks make jowl bacon. Just use the same cure as you would on belly bacon and maybe go a little longer.

    First Hot Smoked Bacon

The probability of that happening has got to be near zero. Certainly, I have had some bacon that was better than another, but it's all been good.

    Throwdowns and such

To some, maybe, but if you ain't got an artistic ability that makes a plate just say, "WOW", it's not a big help. I've watched a ton of videos on plating, and, well, I still plate like crap lol. It's all good, though, I'm not big on competitive cooking and would rather just post the occasional...

    Buying ribs to smoke

The local stores have Smithfield ribs. Good stuff! I mostly hit the sales on St. Louis style but sometimes buy regular spares. If there is a good sale on Baby backs, I will buy them but really prefer spares.

What kind of wood is this?

Looks to be shellbark hickory to me, may also be pignut. Definitely not shagbark, but it looks like hickory.

    What’s Cooking for Mothers Day?

My wife has mostly sworn off beef and pork. She will occasionally eat pulled pork, or a chuck roast fixed in the crockpot. I mostly cook for me, and she cooks for her. Chicken is her main protein, and we just had it. Blows my mind that she doesn't find a nice steak the least bit interesting...

    Smoked Meatloaf

Always! You can see some smoke rolling in the pic I posted. I haven't cooked meatloaf in an oven since I joined SMF and learned of smoked meatloaf. It's the only way to cook meatloaf!

    Throwdowns and such

I can speak to that. It took a fair amount of time from start to finish. Coming up with a theme we thought the members would have fun with to try to draw the most participation, the taking in of entries and keeping track of them, editing the entries into a poll format, the committee members who...

    Smoked Meatloaf

Looks great! I usually cook a meatloaf a couple times a month. I use a pan with a rack to keep the mess down inside the cooker. I usually make mine with a combination of about 2 parts 80/20 ground beef to 1 part breakfast sausage, so they render a bit of fat in the cooking process.
