    my gas one has the flames below, and I have been soaking my smoking wood for at least a day prior to doing the smoke routine. I can't stand the carboning like it does, (Imagine a nice 12lb Turkey, coming out BLACK!) I want to start doing it the way man was supposed to, wood and charcoal!
