Hello, I am Dave, not new to smoking, have a gas one and I wanted help and tips to do it the 'REAL' way. Plus I don't like the heavy carbon that I get when I use the gas smoker.

my gas one has the flames below, and I have been soaking my smoking wood for at least a day prior to doing the smoke routine. I can't stand the carboning like it does, (Imagine a nice 12lb Turkey, coming out BLACK!) I want to start doing it the way man was supposed to, wood and charcoal!

When you uploading to photobucket I always use the Large img setting, 640 x 480 it is a nice size...
 
First off Welcome to SMF grahd. You'll like it here cause there are alot of good folks here and alot of good recipes and some really good advise too. Now your gasser is putting soot everywhere. Are you putting too much wood in the wood pan.
I have a gasser Gosm and I have never had anything like thet happen to my meat. Well if you want to go to a charcoal unit go for it. we can help you there too.
 
I think your problem is with the air adjustment on the burner tube. Its a thin metal slide that allows more or less air to mix in with the gas. If your flame is not a pure blue and has yellow streaks or worse yet is mostly yellow/orange flames that is where the soot is coming from. Proper tuning of the burner will eliminate all the soot. You should not have any at all.

Get someone who knows about such stuff to fine tune your gas and you will be fine. It takes less than a couple minutes to fix and there's No need to get another smoker.

Another cause for black soot in bbq and smoker burners is that bugs crawl into the feed pipe on the burner. As soon as you turn on the gas the bug gets gassed leaving a constriction in the pipe. This causes an improper air fuel mix and the result can be soot. Its important to clean out the openings every once in a while to ensure that your gas flows freely.
