I'd like to do an all-nighter but I'm using a horizontal offset, so I need to add fuel every hour unlike you lucky guys with the plug in smokers! Maybe in the summer when it's warmer at night and I have a hammock setup I'll give it a try.
Thanks for all the generous comments. On the beef ribs, I got them at Gartner's meat market here in Portland. It's a nice locally owned place in NE with a full service putcher, and the prices are really good. Beef Ribs are hard to find at the supermarket, so I had to search a little.

Hi Beth. I have a horizontal offset, and I've found two things to be true: 1) The temperature is in fact 10-15 warmer nearer the firebox, even with accessories like convection plates, etc. For a longer smoke you might move the meat to the other end and 2) The temperature is warmer at grate...
I'm new as well, ribs are good to start with. I definitely was helped by the e-course and Jeff's killer recipes. The key is to have fun and don't panic if things don't always go as planned!
