    New member, new WSM smoker

I've had mine for a bit over a year and wonder why I waited so long.

    Whats your favorite BBQ sauce?

I use a sauce recipe from Jeff's book, Memphis #1 (without the liquid smoke). People seem to really like it and it gives me something to do (other than drink beer) during the smoke. It also fills the kitchen with a nice aroma when it is cooking.

    3-2-1 Method?

Just remember, the time isn't as important as the tenderness. You should see the meat separate from the bone when you pick them up in the middle with a set of tongs. If they don't they will need a little more time. The last two times I've done spares I didn't wrap them. The first time they were...

Chance of rain on the 4th - need advice

Not to criticize but if I lived where you do I would be looking to build a more permanent structure. Maybe a trellis which would allow you to add a canvas cover when needed (I'd angle it a bit so it would drain off the back of the deck. I like the EZ-Ups but when there is wind they can be a bit...

WHAT IS EVERYBODY SMOKING, GRILLING OR STEWING FOR THE 4TH OF JULY?

I'm not smoking anything this weekend. I'm just grilling some sliders and brats. Next weekend we are throwing a big shindig (25-30 people) on Saturday and I'm going to smoke two turkeys.

    pork butt stall

See how accurate the thermometer is by sticking it in icewater. It isn't going to help you today but I find having an accurate thermometer that can measure the temp of the smoker as well as that of the meat is invaluable. I use the Maverick ET-732 (many on here do). It isn't too pricey and it...

What do you rub on your butt?

First Smoke - Back Ribs turned out a little dry...

Those are notoriously inaccurate. My advice is to go out and get an electronic thermometer (I use the Maverick ET-732) that allows you to monitor both grill temp as well as meat temperature - not that you need the latter for ribs. It is about a $60 investment but you will be able to monitor and...

    pork butt stall

I can't help you since I haven't done a butt yet (on my list). But, what temperature are you smoking at? Someone who can help you will likely need that information. Also, how big is the butt?

First Smoke - Back Ribs turned out a little dry...

Sounds like you wrapped them fine. What do you use to monitor your smoker temperature?

First Smoke - Back Ribs turned out a little dry...

I like to keep my smoker at 225-230 when doing ribs. Sometimes I foil them (using the 3-2-1 for spares and the 2-2-1 for babybacks) but I also go with out foiling them (spritzing them with apple cider ever hour after two hours). They generally get done in the suggested time period this way. I...

    My Father's Day smoke

Babybacks go on at 10AM: Received first curveball of the day. Son called and said his gf want to come with him after work which will move dinnertime back 1/2 hour or so. Good thing I have plenty of beer.

    My Father's Day smoke

This week my Mom said she was probably going to order  ribs from a local (highly over-rated) rib place for Father's Day. I said, "What?. Why would I want to eat someone else's ribs." She said she didn't want me to have to "work" on Father's Day. Nope, it ain't work it's all fun. So my parents...
