I use a sauce recipe from Jeff's book, Memphis #1 (without the liquid smoke). People seem to really like it and it gives me something to do (other than drink beer) during the smoke. It also fills the kitchen with a nice aroma when it is cooking.
Just remember, the time isn't as important as the tenderness. You should see the meat separate from the bone when you pick them up in the middle with a set of tongs. If they don't they will need a little more time.
The last two times I've done spares I didn't wrap them. The first time they were...
Not to criticize but if I lived where you do I would be looking to build a more permanent structure. Maybe a trellis which would allow you to add a canvas cover when needed (I'd angle it a bit so it would drain off the back of the deck. I like the EZ-Ups but when there is wind they can be a bit...
I'm not smoking anything this weekend. I'm just grilling some sliders and brats. Next weekend we are throwing a big shindig (25-30 people) on Saturday and I'm going to smoke two turkeys.
See how accurate the thermometer is by sticking it in icewater. It isn't going to help you today but I find having an accurate thermometer that can measure the temp of the smoker as well as that of the meat is invaluable. I use the Maverick ET-732 (many on here do). It isn't too pricey and it...
Those are notoriously inaccurate. My advice is to go out and get an electronic thermometer (I use the Maverick ET-732) that allows you to monitor both grill temp as well as meat temperature - not that you need the latter for ribs. It is about a $60 investment but you will be able to monitor and...
I can't help you since I haven't done a butt yet (on my list). But, what temperature are you smoking at? Someone who can help you will likely need that information. Also, how big is the butt?
I like to keep my smoker at 225-230 when doing ribs. Sometimes I foil them (using the 3-2-1 for spares and the 2-2-1 for babybacks) but I also go with out foiling them (spritzing them with apple cider ever hour after two hours). They generally get done in the suggested time period this way. I...
Babybacks go on at 10AM:
Received first curveball of the day. Son called and said his gf want to come with him after work which will move dinnertime back 1/2 hour or so. Good thing I have plenty of beer.
This week my Mom said she was probably going to order ribs from a local (highly over-rated) rib place for Father's Day. I said, "What?. Why would I want to eat someone else's ribs." She said she didn't want me to have to "work" on Father's Day. Nope, it ain't work it's all fun. So my parents...
