I bought a MES40 and didn't even use it before I bypassed the stock controls and added an AuberPID. The box is great and a smoke tube with a PID makes it a great smoker.
...this correct:
- The instructions you give at the beginning of this thread are just to bypass the MES controller?
- I then need to get an AuberPID. Can I use this one from Amazon that has wifi: https://www.amazon.com/Wireless-WIFI-Temperature-Humidity-Controller/dp/B06XFV4JT1/
or do I have...
...the MES heating element.
The PID will keep sending power to hit the temp you entered in and hold at that temp.
4. The SSR is inside the AuberPID controller already so you don't have to buy or use a separate one. The SSR's job is basically to act as an On/Off switch when the brain of the...
Congrats on the rewire!!!
Yeah your braided wires are red and blue. As long as you go smooth white to braided and smooth black to braided, you have completed the rewire!
Soon you will be full blown PID operating :D
I used the AuberPID WS-1510 ELPM and turned my 6 qt manual not digital slow cooker into a yogurt maker or SV water oven set to high that would hold to the degree with P=4 I=0 D=40 per Auber chart they sent me before I got the stick Inkbird in 2019 for a big SV. No circulation needed and works...
That's what I did with my ST1460, but I put a warning tag on the ST cord saying not to plug directly into wall, as it would now be on 100% of the time and no longer thermostat controlled.
I purchased a Smokin It 3.5 pro Series last month with the PID and can tell you that it cannot determine or regulate its own temp if the outside ambient temp is freezing. I've done extensive testing and find wild temp fluctuations (until the unit warms up for about 3 hours) of up to 40 degrees...
I use Chopsaw's like you have but with the Mes 40 volume and 1,200 watt element vs his Mes 30 800 watt element I'm P=1 or 2 or 3, I=208 and D=210. I set the Auber to single step mode, no program and no recipes. No entering minutes it stays on the temp you last set. I set the high low alarms...
I cannot tell for sure if your Novus is but Auber is legit PID and programmable. Set it for a sausage ramp you set and it runs how you want within a tight spec. Will also run as high as you set it. 325F for ribs etc no issue for the Tex from memory.
Last run was some cured dark meat turkey.
MES 40 , mailbox mod, auberPID. Best of the best for smoking fish, jerky, sausage. Just got done doing cheese. Was -2 ° out, set the auber at 40° and smoked for 4 hrs, didn't open smoker once or look at the dust tray in the mailbox.
So here my problem. I'm running a chat broil electric smoker with an AuberPID. My cook schedule is 100 degrees for an hour no smoke. Then roll smoke, 140 for an hour, 150 for an hour, 160 for an hour, then 170 until I hit an IT of 155 degrees. Problem is after about 7 hours the sticks tend to...
Good report back.
As with any system there will be the tuning and learning and a rewired MES is not an exception to that rule.
I think once you get your probes all sorted out you will good to go.
My probe setup is that I have my auber probe on the UNDER side of the lowest smoker rack placed...
This is perfect, exactly the info and advice I needed, thank you.
I'll keep you posted as to how it goes. I do like the Wi-Fi idea, but depending on the price adder I may not have the funds now to do that. Wife is not happy the MES is dead, and that we have to pay any money at all to get...
I don't remember how I bypassed the controller on mine, I do know I found the info here. Mine works great with the AuberPID, I just wonder what the max safe temp is for the box.
...have seen every part of the MES and know how to fix it all.
I personally would really consider just doing the rewire and popping on AuberPID controller to transform that smoker into a beast. I always say it's like turning a golf cart into a Ferrari when you do the simple rewire and slap on a...
Don't have a MES, but what I read over and over on the forum the wiring is a big failure in the connectors and a cheap over temp sensor.
Sorry I cannot withstand 40 minutes of video for 5 minutes of actual content but his theme to use a PID control is what you really need for precise temperature...
