Anybody ever rewired a newer masterbuilt smoker to run an auber pid. I have a two black wires, a red, and a white. Trying to figure out what wires need to be wired together for the auber to take over.

I thought the older Smokin Tex were analog , and the new ones were PID ?
If you have the analog one , all you need to do is set the smoker to the max temp , then plug it into the Auber . Auber to power and it controls...

...valve so it can be set to the lowest start temperature and not need electronic ignition to start each time there is a call for temp. An arbour PID will control the solenoid and temperature steps. I used black pipe except for the supply lines at each end. It was significantly cheaper that way.

This PID controller is from Auber Instruments and has all or most of the features used on the Smokin-it digital electric smokers and the Auber instruments plug and play PID controllers without Wi-Fi.
It's just the PID controller so you'd need to be able to build a PID box like a lot of people...

Find a used 40" MES on Craigslist,FB market place or wherever.Rewire it for a PID then do the mailbox mod and use an Amazen tube/tray in it.
You'll never have a better electric smoker for the money.
I certainly understand the appeal! I specifically went with analog because our power is prone to outages and surges, figured it might be too easy to fry the electronics. Something to consider of your power supply is sketchy perhaps?
Welcome to SMF! Yes the MES units are known for being inaccurate. Most here have gone the way of putting in a PID which does an excellent job AND many have done the mailbox mod which frees up feeding wood chips.

Does the TC control the supply ?? Meaning if the flame goes out it turns the gas off ?? If not I STRONGLY suggest using a fail safe system like that...

...standard smoked fare like chicken/ribs/etc. Zero water for that stuff. I used my MES a long time for that stuff and it was good but wish someone woulda suggested a pellet grill as it really does a much better job than the MES. That said, MES + PID works fantastic for sausage (and cured stuff).
Myself I vote for electric with a smoke tube... With the right PID controller it can be set up to ramp temps up automatically... Meaning you don't have to go out and make adjustments every hour like you have to when using gas... Which I am totally against unless it's set up to be fail safe...
I appreciate the response, if you can pm me some links to these upgrades I don’t mind spending a few hundred lol, I use my big pellet grill all the time so this will be a learning curve as I know nothing about this thing other than turning it on, do you use the water pan on these?
