That was a good post above by @tallbm. I grew up in Fort Worth, and I knew good brisket when I had it. I am amazed, really, that so many Texans continue to go to places like Spring Creek and even a local chain in Fort Worth called Cousin's.
As the price of beef has risen, I noticed the fat has increased, too. I have to realy think about a brisket with 30% trim.
The last tri-tip I purchased was very fatty as well. What starts at $4 a pound really goes up with the trim
I made a trip to Costco today. Their choice Tri-tip was $13.99 lb! Glad I still have a small one in the freezer.

I have yet to smoke a brisket. 1) because of the price, 2) because I don't want to f-up a $100.00 piece of meat, 3) the size. I have seen flats, or points, don't remember which, for less than $50.00 at Costco. Will do one of those before the end of the season.
