Do you still go to your State or County fair?

Does this mean after two wins, you can't compete anymore? We have large chili cookoff that has been going on for 30+ years, with 40+ teams, and 3,500+ attendees. A lady on the FedExpress team won the green chili category so many times in a row, she voluntarily stopped entering.

Do you still go to your State or County fair?

I haven't been to the State fair in many years, and it's only 50 miles away. That said, I found out in July that our County fair has several categories for BBQ and grilled meats. You cook at home, then deliver for a 5:00 turn-in time in a styrofoam box. They judge just like pickles or apple...

    Redfish/crab Cakes...

Nice catch ✔️. I grew up in Corpus Christi, Texas and we would catch redfish, drum and flounder often. In the late '60s I can't remember if there was a slot limit on redfish.

    Cracked BGE

When the original BGE forum was still online, there were a lot of people that repaired cracks using furnace cement. I recall the procedure was to grind a "V" into the crack from one side, then fill with cement and let it cure. Then repeat the procedure from the opposite side. So, now you have...

    Short Ribs - Wilma!!!

Very late to this thread... Wow, what a feast ✔️. For me, at 5400' elevation and low relative humidity, barbecue during light rain always comes out great.

Pan fried Sea Trout with Creole Beurre Blanc Sauce, Sauteed Chanterelle Mushrooms, and Grilled Veggies

That is very interesting. I do seem to recall the term white trout, which were usually smaller than speckled trout. We mostly fished from shore and maybe were targeting speckled trout.

Pan fried Sea Trout with Creole Beurre Blanc Sauce, Sauteed Chanterelle Mushrooms, and Grilled Veggies

The Gulf stands alone. I grew up in Corpus Christi up until Jr High school. We called Sea Trout "Specs" and they were delicious. Moving to Wyoming introduced me to more local species, in local "fresh" waters. Years later, salmon and steelhead trout were available in local markets and I...

    Health Insurance Nightmares

Just a heads up... It was announced Tuesday that Medicare Part D subsidies, in effect since 2022, will end this year. So, shop around with different providers, don't just automatically renew for 2027. Providers post their 2027 pricing at the end of September or early October, so you can review...

High Temperature Coating - Need advice

A clean surface and a high temp primer are more important than the top coat. When you are ready for the top coat, you might explore a method called a "stripe coat". Basically, you locate areas that are hardest to get good coverage (like welds, inside or outside corners, nuts or bolts, sharp...

Gumbo with Frozen Cleaned Blue Crabs Question

You can literally put anything in gumbo. Since your crab is "ready to cook", it's only going to take a few minutes at the end. The backs might take a little work. One of your biggest decisions is going to be how dark of a roux do you want.

I haven't made sausage in years.

I think your family's ingredients sound wonderful for a sausage. This link below barely hit's a few of the flavors... but it's worth a look while you are nailing the old school recipe. https://alwaysfromscratch.com/italian-ring-sausage/

I haven't made sausage in years.

A quick search came up with this: The small-diameter coiled Italian sausage you are looking for is known as cervellata (or chevalatta / gevolad), often prepared as a cheese and parsley or wine-infused pinwheel rope. About Cervellata Sausage Shape and Size: Formed into a continuous spiral coil...

I haven't made sausage in years.

At least you have a list of ingredients to work with. This should be a fun experiment. I have a recipe for a Sicilian sausage with some of the same "signature" spices, cheese and wine, so I sort of understand the flavor profile you are going for. When modifying a sausage recipe, or reverse...

    Pre-Sear Tiger Stripe Skinless Thighs

I could totally get behind that.

    My rib cookoff today.

About 15 years ago I took an day competition class hosted by two of the top 10 cooking teams that year. They taught us a lot about moistness and building flavor, and one example were some ribs seasoned only with garlic salt and lightly basted with lard. This was way before injecting ribs was...

KCBS Statement Regarding the Cyclospora Outbreak - July 16, 2026 at 9:06 AM Central

KCBS is aware of the ongoing Cyclospora outbreak being investigated by public health officials. At this time, no changes have been made to KCBS garnish rules, as no produce item permitted under KCBS garnish rules has been specifically identified as the source of the outbreak, and no recalls have...

    Pre-Sear Tiger Stripe Skinless Thighs

Next time I make skinless butterflied drumsticks, I plan on using the pre-sear on one side of them.

    My rib cookoff today.

Sounds like a fun day, turning in full racks seems like a good idea. Good luck. Earlier last week I realized our County Fair has several "broad" categories for BBQ/smoked meats and cheese. You sign up just like you were entering a jar of pickles or jam. And like your contest, we cook at home...
