If cured and then dehydrated and/or smoked it should last well at ambient temps providing it's not fatty. That was the original purpose of jerky.
Granted I've always kept mine in the fridge for added safety and have never made enough for it to last long enough to freeze.
Curious about how long you can store this homemade jerky either ground or whole muscle. Do you cryovac it or just into ziplocs? fridge or room temp storage?

I picked up some ground meat jerky years and years ago at Menards and thought it was great. Went down the rabbit hole and bought a cannon, and I already had the dehydrator.

Funny you say that. I made a few batches of sliced EOR on my pellet. Never really liked the final product enough. Not bad but not great.
Bought a dehydrator and have started making ground beef jerky in it. Liking it much more. Easier on my crap teeth too.
