That is pretty much my standard routine too. I shorten the cure time to 4 hours for Rainbows. A couple of friends like their trout a little dryer than I do, so I take theirs to 155°. The tail end curls a little and I snip with scissors for appearance and to get an early taste test.

Not to hijack this @SmokinHot77 thread, but would you describe your smoker pit temp, smoke time, and SV temp and timeline? It finally dawned on me that my vintage BigChief combined with a SV finish is something to play around with.

I hope you give this a try. I see only positive final results. It really helps the texture and snap of the casing, which for me was huge because our humidity here is so low that if I smoked sausages to long, the casing would leather and be very chewy. This SV process really helps with...
I hope so...I finally saw a vid on YT where a guy showed you "can" turn the flame a LOT lower on a propane smoker (it works on mine, anyway) so I ran a couple of tests and it seems to work with my smoker.
I also have a BigChief so that might be an option and then finish in SV...still trying to...
