    Hello all. Newbie. Cool forum.

Been smoking salmon most of my life with Lil/Big Chief electric smokers, a Turkey or two & a few pork shoulders fer cuban-style pork Sansone weber kettles. Recently acquired a Masterbuilt [mod # 20070311], Digital electric smoker, not sure if thats what it's called... Have smoked some...

    Hello from Idaho

Like to smoke meat and cheeses. Have a Pit Boss 850. I started smoking with a Big Chief decades ago. Still use to smoke cheeses, burger, steaks. It is a good little smoker, easy, safe, quick. Pit Boss is good. A bit hard to adjust temp, and hope to get the firmware upgrade I see on forums. Like...

I am not familiar with SV method. I've seen many posts about it, can you give me some info so I can learn?

    Rainy Day Smoked Steelhead

That is pretty much my standard routine too. I shorten the cure time to 4 hours for Rainbows. A couple of friends like their trout a little dryer than I do, so I take theirs to 155°. The tail end curls a little and I snip with scissors for appearance and to get an early taste test.

    Rainy Day Smoked Steelhead

We've had 4 days of springtime rain showers and I bought a side of steelhead from Sam's to sous vide, but I reserved a generous tail section to cure and smoke. Here is the 'rainy day' set-up with my Big-Chief fish box smoker. I ran some of my remaining A-Maze-N 'Pitmaster Blend' pellets. This...

    Ice bath question

Not to hijack this @SmokinHot77 thread, but would you describe your smoker pit temp, smoke time, and SV temp and timeline? It finally dawned on me that my vintage Big Chief combined with a SV finish is something to play around with.

I really REALLY hope I like this kabanosy because...

Sherry Been looking at my Big Chief smoker for new ideas to justify getting a new heating element. Thinking new bottom and top vents with dampers and something to control the heat. No, a Chief is nowhere near the capacity of the MB or similar cabinet smokers. I rarely make anything over a 5#...

    Daytona 500

Always loved competitive motorsports. NASCAR was fun back when it was actually production chassis, then production engines, then restrictors, then ... Haven't been to drag racing in years. I followed unlimited hydroplane for years and even got to a few races. Now my only regular is truck &...

5 lbs Brats and 5 lbs Andouille - and - I really, REALLY want an electric stuffer

It looks great to me, and I hope if you do another batch with the SV that you'll fill us in. I haven't used my Anova yet and am planning on andouille being my first SV test. My smoker is the simple Big Chief, so any input is really appreciated.

Will this PID work on "any" electric smoker?

Oh...I thought you might have added the protective sheathing. Thanks.

    Brining history?

I'm still a newbie with smoking (Little Chief smoker), but have been noticing that brining recipes really have a big impact on the overall flavor of my fish and turkey after smoking. I was wondering if there are regional differences in the US with regards to amounts of sugar, salt, soy sauce...

I really REALLY hope I like this kabanosy because...

I tried to find an element in the 1000W (or so) range, but I can't find one that'll fit in it. I "thought" I'd found one on Amazon, but the depth as shown/stated in the item description was wrong (it was 1/2" bigger than the cabinet depth)...returned it.

    Home made deli meat?

...as you can fit into the zipper bag, remove air, seal. Discard the remainder. For cool smoking, I start off in the 150° range in my Big Chief smoker, and look at the color at 90 minutes, and generally pull at the 2-hour mark. Now I have 3 options for finishing: Move to my grill or my oven...

Will this PID work on "any" electric smoker?

So after discussing whether or not to go ahead and get a MES AND a previous discuaaion about using a hotplate in a Big Chief, I decided to see if there was a plug-n-play PID controller that didn't cost an arm and a leg and found one at Auber's website on sale for $129 until midnight tonight...

Will this PID work on "any" electric smoker?

Here’s a pic of my Big Chief with a Proctor Silex element.... And connected to an Auber PID. Note the Auber temp probe going thru the side of the smoker. BTW, I think the Auber in this pic is the WS-1211H

    Ice bath question

I hope you give this a try. I see only positive final results. It really helps the texture and snap of the casing, which for me was huge because our humidity here is so low that if I smoked sausages to long, the casing would leather and be very chewy. This SV process really helps with...

I really REALLY hope I like this kabanosy because...

I hope so...I finally saw a vid on YT where a guy showed you "can" turn the flame a LOT lower on a propane smoker (it works on mine, anyway) so I ran a couple of tests and it seems to work with my smoker. I also have a Big Chief so that might be an option and then finish in SV...still trying to...

Will this PID work on "any" electric smoker?

Oh, I know...just thinking ahead. My immediate use for it "is" the Big Chief...right after I do the hotplate mod. That kabanosy I made the other night is what prompted this, BTW. It was so good it just messed me UP and I had to open my wallet (bought sheep casings, too...always swore I'd never...
