...Clean the bottom, but never scrub the walls, door or inside. Mine is a dark brown from years of use. And I can do 80 lbs of chicken on my SmokinTex without a drop of wood.
Spray the chicken skin with Pam cooking spray. Add your rub and smoke 3 hours at 225 Degrees. Comes off the smoker...
...think several members on this forum can help you out with your MES. But if not, and you still want to smoke good, there are inexpensive offsets available. On the electric side there are those from Cookshack, Smokin-it, and SmokinTex. No mods necessary. Just something to think about. Good...
...that you can use chips and pellets. Since I am not sure what brands are available in the UK I give you any advice. I personally have the SmokinTex electric and am very happy with it, there website does note that they will help with International orders.

...fire it up again for the day. Will do the first meat on it Monday.
Tomorrow will be putting 14 whole catfish that weight 10 lbs on my 1500 SmokinTex. Got them in a 2.5 gallon ziplock bag tonight soaking in the Brine. Will take my big half circle needle and cotton string. Run the needed...
Clear! ..... *Zap*
Sorry to revive this post but I still have creosote issues.
-using high quality fruitawood
-using small chambered smokin it #1
-using PID
Would drilling holes assist regular chunks? I pretty much have only had success with a large chip or about a 1/4 oz or less. Anything...
...can find many smokers and kick the tires and do all manner of touchy feely tactile inspections, investing in Smokin-it or a Cookshack or a SmokinTex is a leap of faith based solely upon forum posts and the respective web site of each. I can say without reservation that two of these smokers...
...the question about another brand of smoker.
The big three electric smokers that are all stainless steel inside and out are the Smokin-it, SmokinTex, and Cookshack, listed in order of low to high cost. No windows or gaskets; no need to continuously load wood chips ( a couple of ounces of...
Louis - you cannot go wrong with the CS 066 Amerique. It is fool proof. I don' know if it is made with European voltage. Two other all stainless steel smokers are the Smokin-it and the SmokinTex. Unlike the fully digital CS, these other two are analog only.
SmokinTex has a good reputation. Only one downside and this applies to Cookshack as well as SmokinTex: the company forums while extremely informative are not very active. OK, it is not a downside unless one is addicted to the social side of smoking. But then there is always SMF.
... The first couple of pages deal with it being relatively unheard of; but they have been going strong since 2012. They are somewhat pricey (but come with a 3 year warranty) but not nearly as pricey as the SmokinTex and Cookshack line. Check them out. Here is their link:

...the CS and the SI sites and see what the customers have to say, as well as the pricing for the units. CS is made in the USA. SI and the SmokinTex (ST) are imported as are a lot of electric smokers these day. That is not a bad thing if they are properly designed and built. The SI and ST...
Hello there.
I recently purchased a new smoker, which is a SmokinTex 1400 series smoker. I cooked a brisket last week, and smoked some jerky also. Turned out excellent.
I just caught some brown trout today through the ice at a local lake.
I have them gutted, scaled, and...
Judging by photos of the jerky dryers on the SmokinTex and Smokin-it sites I'm thinking they use a fan similar to the larger of the two that you have. Pretty hard to tell, looks can be deceiving. Like yours, they are 12 volt. The larger fan may be a tad more robust and better able to handle...
The down side to me would be no window to look thru to see what is going on inside smoker.... lol
My MES has me spoiled in reference to the window. I gotta have it ...
...did ribs in my SI 3D and they were as good as anything I have done in my CS Amerique.
While I cannot comment one way or the other on the SmokinTex, I would recommend scouring the comments here on SMF as well as visiting the actual smoker sites for additional information and comments.
Good...
Let me begin with a confession: I am not a purist. I want results rather than process.
To that end, I own a SmokinTex 1400. In the beginning, my results were not spectacular. I was using the built-in analog thermostat and the SmokinTex guesstimates of time required. It proved to have wide...
Just to be clear, the only smoker of the cookshack, smokin-it and smokintex families made in the USA are the cookshacks, and the price bears this out. The others are imported like most things are today and that includes master built, sandman, etc. I will say that Steve, the owner of SI, has...
I use chips, chunks, and dust in my SmokinTex, I assume that some of the dust actually burns. It is the only electric that I have owned, so I have never experienced no smoke ring from an electric,
Now, it does not create the 1/4" plus ring that I get from my stick burner.
