Don’t worry about set temp. Tell me what your grate temp was. That’s what you need to watch. May need to run your set temp to 300 to get a grate temp of say 250. This is learning your cooker. A weldingblanket from harbor freight over the cooker can save a lot of grief. Insulation.
That smoker should run great with the Jambo Design....
The stack should take care of the size of the smoker....
You want to insulate the FB with a weldingblanket ?? or build an outer skin and stuff Rock Wool in the space....

When I bought my Traeger the rep actually recommended a weldingblanket Instead a Traeger one. I went with a Traeger anyways since I think its more of a pain to deal with while cooking or using the fold up tray.
Oh here is the solution that really did it, get a 6x8ft weldingblanket, wraped it around the smoker, cut holes for ventilation and screwed back the handles and all fixtures again over the double layered blanket
I have thought of using a weldingblanket, but as I said earlier, I welded the openings on the base shut today. There is a small vent window for the hose out of the front lower side beneath the flame adjuster. I think this will greatly help reduce the issues I've had with wind.

VERY TRUE! wind is the worst. I would try to block the wind and get a weldingblanket. both will help alot.
the flat looks quite good! they are a challenge in my book for sure. FP's are much easier.
I have the 22 and it runs fine in the winter. You could get a weldingblanket to help hold the temp or save some fuel.
I also have the PBC and it’s more set and forget with temp. It’s a great cooker but with less control.

Kettle is charcoal that I use year around. I have more cold weather than most. Kettle does well in winter.
I got a pellet grill (pooper)in February. I use a Harbor Freight weldingblanket to hold heat in colder and or windy conditions.

You can use it all winter. It will just consume more pellets keeping up to temp. Used my RT when it was -5°. Going to make some type of cover with a weldingblanket for this ND winter.
Have you thought of using a weldingblanket to insulate it and keep the wind at bay. If you do, you will need to modify it so you can use your vents.
I also use an Amazen tube like @cmayna suggested as well. When I use the tube I place it above one of the lower vent holes on the lowest rack...
If you have a Harbor Freight near you, you can pick up a weldingblanket pretty cheaply. That's what I use, folded over, on my GMG Daniel Boone. Used it prior to that on my cheapie horizontal. It helps keep a good temp, and saves on pellets, too.
