They're used a lot on the BBQPitBoys videos. These guys are fun! BBQPitBoys.com I love the music they use, by a band called Blue House and the Rent To Own Horns.
I cold smoke my cheese and other toppings prior to building the pizza and cook it in the oven, as my outdoor equipment (MES40 and Weber Q1200 grill) can't achieve pizza cooking temps. We don't make pizza frequently enough to justify a pizza oven.
Yes...we're the sort of people who feel the...
Ahh...the eternal "argument" over deep dish PIZZA. :D Whatever anyone chooses to call it, it's GREAT! I wouldn't be surprised if Chicago natives have been shot over this difference of opinion. People get shot regularly every weekend over some thing or another.
In fact, Chicagoan's were...
When we make our own Provel, we use a couple of drops of Liquid Smoke. Really kicks it up some. Actually cold smoking such a low quantity doesn't make sense, but I've not made Provel for a very long time (years), so now when I make it again, I'll use my smoked cheddar...maybe the other 2...

We make our own using professional deep dish pans, and the Geno's...
We love that show, too! It's in my archive for rewatch every couple of years.
Check out a show called "Con Man", with Alan Tudyk playing an actor who used to play a spaceship pilot with Nathon Fillon as the captain. His acting roles dwindled after that show ended, but he keeps trying. It's...
I lived my whole life in the west and north suburbs of Chicago before retiring to Hawaii in 2000. I fondly remember all the fantastic sausages available there and in Wisconsin. I love thuringers! I remember Usingers to this day, and Maxwell Street fairs in downtown Chicago, with the large...
Living way out in the middle of the Pacific, Costco is my source for sausage. They typically have Farmer John brand hot links and polish. Johnsonville brats once in a while. No Italian sausage in a very long time!! Portagee (as it's pronounced here) sausage is huge here, and many brands are...
I run a MES40 Gen 2 since 2013. I recently added a mailbox mod with pellet tube or maze which solved many serious problems. I recently looked into a PID, but was not sold with advantages of steady temps over the usual +/- 20 degree swings electric smokers are known for. Our kitchen oven works...
