There are three all stainless steel models. All are expensive but reliable. Smokin-it, CookShack, and SmokinTex. I have a Smokin-it and Cookshack. Utterly reliable. No problems or iffiness. Just solid performance. I have no experience with SmokinTex but they have been around for many years.

Late to the comments here. You will do well with either the CookShack or the Smokin-it (I have both). They are rock solid and have dedicated forums specific to their smokers. A third all stainless steel smoker is SmokinTex. They had a forum but it looks like it was taken down.

It fill fit with room to spare . I have a hard time fitting 12.5 pounds of ring bologna due to the shape but all the sticks and sausage fit on the racks. It's a SmokinTex 1460 and I think it's supposed to handle 60 pounds.
Your PID settings out of the box ( P=7, I=600 and D=150) is really close to the settings you discovered. Probably at 225 with your style smoker and smaller vents and the pic of your smoker in the app. With the bigger 3" vents in the Mes 40 and mailbox mod for the pellet maze it really breathes...
