Thanks for that additional link, will definitely check it out. Just found out my PID arrived a few moments ago.
Opened and everything is there so will be able to test maybe during lunch.
Realistically if you could find a used 40" Masterbuilt Electric Smoker(MES) do the simple rewire and add an AuberPID you'd have a better smoker at a fraction of the cost.Doing the "mailbox mod" makes it even better. It just might not be as pretty though!
I believe TSM states absolute max temp is 250 but max setting with supplied controller is 225. I could be wrong. I am not looking for anything over 250 but don't want to know I'm running maxed out every time at 225-250 if that makes sense. And, everything will definitely act differently with...
Linear control provides smoother power adjustment, the thermal time constant of the heating element often makes pulsed control (via SSR) just as effective, especially for electric smokers. As JC in GB pointed out, the difference in performance isn’t significant enough to justify the higher cost...
This might sound crazy but you get a different flavor between the Bella's / Smoke Daddy style smoke generators and true cold smoke generators. I guess it has to do with removing a lot of the chemicals and moisture with the cold smoke generator.
I use the cold smoke generator for cheese and...
Oh I forgot lol. But yeah welcome to PID40 hahaha :P
Having seen how small the MES30 is I knew the MES40 was for me. Though I'm 1 person and rarely fill it more than half, I didn't like the fact that I couldn't do a whole rack of ribs or a whole brisket in an MES30. Here in brisket land not...
I got my bella cold smoke generator and the auber fan installed. Just wanted to make sure the coil element wast another point of failure. The pid controller was on backorder but hopefully will ship out this week so I can get everything dialed in. Appreciate your support.
There's an entire sticky thread within the Electric Smokers sub-forum for this exact subject.

Mods might want to merge this within that thread.
This is so true , but for some reason people steer clear of it .
You have a great smoker box design .
$150 dollar Auber plug and play PID controller
and a new element for 40 bucks and you will be amazed how well it functions .
You have the box , and You CAN'T buy a smoker for 200 bucks that...
Thanks for the suggestion! Honestly, until I read about that option on here earlier today while searching for some ideas on my issue, I hadn't considered it (or even knew it was an option). But, I would consider it, I'd like to figure out what my problem is first and then go from there. I want...
I was going to ask how in the world you're getting accurate temps where the food is if your probe is right above the element. But the wood sheet kind of answered that, I guess. That's actually what my problem was - my probe was on the bottom rack, but by my meat was in the middle and ~50f less...
Though not the cheapest way using an AuberPID sure as heck is the easiest way.
Depending on your model # you may need to do nothing more than unplug one wire harness and plug into another and done, though doing the rewire isn't all that hard either. @tallbm guide is very easy to follow and he...
40 owner for many many yrs. Their downfall is the electronics. A lot of members including myself have gone with an AuberPID to control these bypassing the stock electronics for a much more accurate temp (within a couple degrees).
...is.
A man with two temperature probes is never sure!
I have never used the Masterbuilt temperature probes or controller. I use an AuberPID controller. So old they don't make it anymore.
And like JIMSMOKES, I put another probe near what I'm smoking for a reference/check. A few degrees...
This may very much be of interest to you:

If you have any questions @tallbm is the person to ask first.
PS. The Simple Rewire and an AuberPID would've brought that MES back to life.
...heat up.
Now that you are digging into your MES a bit more, you can go down the wonderful rabbit hole of the simple rewire and using an AuberPID controller to control it and make it perform 100x better than anything masterbuilt makes brand new.
If that interests you then these 180C ceramic...
Hi there and welcome!
I'm with @choochooman442 and 1st thing to do is test the probes in boiling water and see how on/off they are.
Then as people have mentioned, even next to each other they may read differently. The key is they are in the ball park.
On my lower rack I have 3 different temp...
I added the AuberPID a few years ago and it was a game changer. Also did the chip tray removal as Rich recommended. That enabled me to use wood chunks as well. Add the Cold Smoke attachment and the tube and I'm very happy with the performance as well as the flavors. I tried a Pitboss pellet...
