...it so much when we moved from hawaii and I sold mine there, I bought another one because it was just so easy. Like stated above, I used the AMNPS and made it even easier. Only regret I had with mine was I didn’t buy the 40” as it was a little more. I’m sure I’ll end up with a 3rd at some...
^^ Just what I was gonna say. If you do sausage, bacon, or cold-smoke cheese, keep it - it's perfect for smoking cheese, especially with the addition of an AMPS or tube.
Sorta depends on what/how you cook. If all you do is smoke pork, beef, and poultry, you may not find much of a need for...
Im not having any luck with the search function here or Google or Safari so I wanted to ask where do you all purchase wood dust for the AMNPS tray? I've found threads that mention using a table saw or other shop equipment but is that the only way?
So the issue with meat separating from the casing is from it getting too hot too quick. You need to bring it up to temp slowly so the proteins from the casing and meat can bind together, otherwise the meat cooks too fast and separates away from the casings. I have customers that do this on...
It's from a Proctor Silex 1200W hot plate. I use either the AMNPS or a smoke tube with pellets or dust. I don't see why you couldn't use a CI pan, but I don't know how it would behave if it was at max temp.
...sticking points is that I sleep while it cooks lol. :emoji_laughing:
I run an electric smoker (MES40) rewired with a PID controller and use the AMNPS tray + mailbox mod for 12 hours of perfect smoke.
I also smoke at 275F unwrapped the whole time. If you don't wrap your butts then you don't...
Yep! I rock an AMNPS tray but it is good to hear you are the living proof on loading up a few and rocking along with them.
Makes me want to get one for my propane grill..... wheels are spinning in my head now :P
Thank you so much. I appreciate you taking the time. Been worried about the flavor oils in the pellets. I usually use the pit boss pellets but you taste so much more than they advertise. Especially in the older pellets which makes me think they dose them with that oil.
I made a cart on Amazon...
Sounds like some fun findings!
Also when you tried the AMNPS tray did you do the thing by putting "legs" on it to elevate it. People use some machine screws as leg to left it so air gets under the pellet tray.
Finally, for 100% wood on the label pellets your best bet is Lumberjack. They will...
...a cheap but well burning pellet for the hopper (Pit Boss). If I owned a pellet grill I would do this. I own an MES (electric) and I use the AMNPS tray to burn 100% pellets or my own blends. One kind of exception is that I do use Pit Boss Competition Blend and I doctor it up with 100%...
...a lot more about smoking since then, so I decided to give it another try yesterday...sharp cheddar, colby-jack, and gouda
Big Chief, AMNPS with 50/50 apple/pecan (started with dust, but had to change to pellets...more about that below), total "accumulated" smoke time was about 3 - 3.5...
Here is the chips

...time planning, and holding properly so I'll skip those.
For me major game changers were going unwrapped.
Using 100% Mesquite wood pellets (AMNPS and electric smoker).
Buying bigger 14-15lbs+ briskets and trimming so that the thicker flat is about equal in thickness in whatever I don't trim...
...all that is not necessary. Now I don't know what you would do about your wood chips but I would look into one of the A-Maze-N Pellet Smoker (AMNPS) trays or tubes that will burn wood pellets to produce smoke. The tray will produce perfect smoke for up to 12 hours. The tubes will do 3-4...
Okay this makes me wonder how often should chips be changed out. I’ve been leaving them in entire smoke cause I’m only smoking 4-5 hours and filling chip box up? I also am afraid when I open smoker to adjust anything I lose all of my heat? Should I not worry about that
Sure. PM me and I'll give you any tips I have. But I gotta tell you, most of what I learned about setting up a mailbox mod I got from @daveomak . He's done multiple posts on the mod, so I did a search but couldn't find what I was looking for--just too many. Hopefully he'll see this and...
Yes indeed - I found that over 250-275, the pellets do burn up really fast. Thanks for the tip, I did add the mailbox mod, but still feel like I need more airflow to keep the pellets burning. Sometimes it's great, other times it goes out pretty frequently.
Hello, I am just curious as to if any specific MES 40" models past or present are best used with something like AMNPS or the Tube smoker? I previously used a 30" Masterbuilt Gen 2 smoker I got around 2012, (had the window, digital controls) and looking to go up a size. Only issue I would have...
