There are a couple of mods that can be done to the MES that can make it a much better cooker than it is out of the box.PID controller and mailbox mod are something to consider in the future.

Yep, have done the 2 mods. Auber PID and mailbox for smoke tube or tray. I use this smoker way more than my RT pellet grill. Very accurate low temp control for sausage, jerky, fish, etc.
I'm also on the bandwagon for buying an Auber PID. This one with the multipurpose sensor is the least expensive option that will definitely handle the electrical power pull of an MES40:
