    Help me pick a new smoker!

    Find a used 40" MES on Craigslist,FB market place or wherever.Rewire it for a PID then do the mailbox mod and use an Amazen tube/tray in it. You'll never have a better electric smoker for the money.

    I certainly understand the appeal! I specifically went with analog because our power is prone to outages and surges, figured it might be too easy to fry the electronics. Something to consider of your power supply is sketchy perhaps?

    Welcome to SMF! Yes the MES units are known for being inaccurate. Most here have gone the way of putting in a PID which does an excellent job AND many have done the mailbox mod which frees up feeding wood chips.

    Does the TC control the supply ?? Meaning if the flame goes out it turns the gas off ?? If not I STRONGLY suggest using a fail safe system like that... I remember that thread as well... I've also heard of others using a PID for gas...

    ...standard smoked fare like chicken/ribs/etc. Zero water for that stuff. I used my MES a long time for that stuff and it was good but wish someone woulda suggested a pellet grill as it really does a much better job than the MES. That said, MES + PID works fantastic for sausage (and cured stuff).

    I have the MES sportsmen model. My unit at 2 different times got over 350°f without shutting down. One time it got over 375. This was a brand new unit at the time. I wouldn't trust the cutoff switch. I replaced everything with a pid unit I wired in and a better cutoff switch.

The cold temp is the contributing "dips" in the climb when the auger or fan cycled...

    GMG makes a nice smoker, I have the baby one, and many of my friends have bigger ones. They have a true PID controller and have a very nice smoke profile. Recteq is also nice (I love mine) but if the GMG is in your price range and the RT isn't I would snag one without hesitation.....

    Relay on the board in the bottom has welded it's contacts in the on position. Replace the board, if it is still available, or better, rewire per instructions above and buy a PID controller for a significant improvement in your smoker.

    Both my electric smokers are controlled by PID, even though the original controls can still work. If I were in your shoes, there is no way I would spend any money on replacing the less than optimal original control system when that money is far better spent upgrading to a PID controller.

    I have been debating the same thing electric and size/watts vs propane. Mine isnt as big 30” sq inside dims x 5.5’ tall. I am leaning towards using a tejas low pressure burner with a thermocouple. Not sure how or if can use a pid with propane.
